I've a similar point, in 1938-39 I-16 and Me 109 were the planes that included the latest tech developments and marked the end of the biplane era and defined the how fighters would be in the next a years. In some aspects their impact in the fighter development are similar to the one of Me 262...

MiG-3, excellent performance but not at the altitude that the combats took place; a really sleek machine. With the il-2 engine (there were some prototypes) could have been a superb low altitude fighter

I would vote for the F4F for her contribution in the dark times, it was decisive to fight the IJN in 41-42.

I'll go for Mig-3; an interesting plane, with very nice lines (looks like a pre-war racer) and with excellent performance... not at the altitude range where real combat took place
My other favorites: Mosquito, Mustang, Corsair, Fw 190D, He 219...
