The YouTube channel Soto Cinematics just released a recreation of Keneth Collier's first V-1 tipping on 23 June 1944 using IL-2. I think it's well done, but I'm not an expert in the history of V-1 interceptions.

I wonder if the Spitfire was being tracked by ground AA.

They didnt have to make contact with the V1 wing, just the change in airflow with the fighter wing close was enough. The V1 only had control surfaces on the rear so it couldnt make much correction to return to level flight.
