How does the instrument arrangement (layout) in the photos above compare to "modern" thinking on the matter?

Would you not want your artificial horizon and compass center/midline in the panel (w/ compass above?)

Actually its not that far off. The AH is normally in the middle as that is considered a primary flight instrument under noral IFR conditions. In lieu of a compass you have a Dircetional Gyro, the wet compass is used to check the "DG" for precession.

This is a typical panel for IMC flying. Add a glideslope/ marker beacon , VOR, DME and ADF and you're set. Kick it up a notch with a GPS.
