How do you trim in the video game?

You go into the control options and set that up. I have that along with prop pitch on my joystick. I should probably also put in the supercharger.

By the way, how do I use prop pitch appropriately? I've just been using it to slow down and get a couple more seconds of gun time on my target before zooming away.
