To take off, do I need to close the canopy, lock the tailwheel, set prop, toggle engine, set engine, open radiator, release wheel brakes, turn flaps up, and remove chocks?

For landing must I place chocks, open the canopy and close the radiator?
 
Unless youre doing a carrier landing you don't need the chocks, The opening of the cockpit is doesn't make a difference except that it may provide virtual comfort to the little pilot guy in the cockpit or give you better visibillity. The open Radiator allows more air into the engine, and when it is closed it streamlines the plane. that's about all I know.
 
If you're new it might be best to have your Flaps down as it makes the plane take off quicker, but be careful not to pull up too quick or you'll stall and crash m8.

Only a few aircarft have Canopies that open also m8 ;)
