Evening all.

I've read a fair few books now (Stanford Tuck, Geoffrey Wellum etc) detailing the war as an RAF pilot in a British Aeroplane. I wonder if there are any good books out there featuring wartime exploits but in a Mustang? Any recommendations?

Couple of good ones by Lt.Col. James A Goodson, who joined the RAF, then transferred to 4th Fighter Group when the USA entered the war. Out of his two, the one dealing mostly with Thunderbolt, and then Mustang ops, is 'Tumult in the Clouds'. His other book, entitled 'Last of the Knights' covers mainly his time in the RAF, although also includes the later years.
As a history of a unit on Mustang ops, there is, of course, Jay's new book, detailed in the thread above this, covering the Blue Nosed bastards of Bodney.
Caldwells' book on US Air Force heroes covers fighter ops in p-28, P-47 and P-51 also.

you need to seek out a copy of Robert Goebel's "Mustang Ace". Goebel was an 11-victory ace with the 31st FG and postwar a physicist with NASA - not only does he write a super story he explains potentially difficult subjects such as torque and aerial gunnery with the precision and clarity of a trained scientist!
