Welcome to the site.
However, as you may notice that's the forum about the World War 2. So the topic for the Su-27 and MiG-29 may not be covered here. Anyway I hope there can be somebody who can help.

Numerous books on these two planes have already been published, some of them very comprehensive (e.g. by Gordon or Fomin). Original pilot manuals and technical descriptions are also available. I'm just curious, what is the idea behind your book? Just another compilation from known sources? What new information are you going to publish in it? Do you have access to Soviet/Russian archives or exclusive memoirs of designers/pilots/aviation technicians?

im going to try using as many sources as possible and use the manuals to try and build a comprehensible book. I will attempt to interview people who flew or operated on these aircraft. It would be helpful if you could read over my notes and tell me what I'm missing
 
I think you need to look at what's already been published: there are some impressive books out there which go into a great deal of detail. Your publisher will doubtless ask what your market is, and know that market already.

Good luck but know where you are going to fill a gap.
