As far as I know the crew of transport planes do not have parachutes, unless the mission is to transport paratroopers on a mission the passengers also do not have parachutes. Also unlike the movies Transport A/C do not have ejection seats for the crew.
On the issue that the engine fell off, all external wing mounted engines are designed to come off the wing if a specific vibration level is reached. This is to prevent damage and possible failure of the wing structure that can be caused by excessive engine vibration. This sometimes can cause other issues if it does not exit the A/C as designed like the American Airlines DC-10 in Chicago about 30 years ago.
As previously stated it looks like the uncontained engine failure may have damaged the wings causing a fuel leak that could not be contained.
