Seriously, my grandmother whom is one that would be called hard-core southern used to eat scambled pig brains and eggs while I was growing up - which you can still find at the grocery stores here.

"Thankyou, thankyou, you've been a beautiful audience...!"

About the pig's brains, here in Hungary the 'disznó vágás' (pig slaughter) is still fairly common, and EVERY part of the pig is used - even the blood is collected when the throat is slit and eaten as a kind of broth.
