Just got back from a Perillo northern Italy tour which is basically a summary of the history of parts of Italy. Rome, Bologna,Venice, Portofino, Ciqueterra, lake Como, lake Maggiore, Rappallo, and a few others.

lol, pig hind quarters are salt cured for 24 months, there's 80000 of them at roughly 240.00 each. Prosciutto de Parm. Had samples and they just about melted in your mouth. The round balls are Parmigiana de Reggiani, aged also 24 months. Delicious.
