I know next to nothing about train engines. What are the two shields mounted on either side of the front of the engine for? They seem common on steam locomotives but have never seen a more modern engine with them.

These are smoke deflectors, also called "blinkers" in the UK or "elephant ears" in the USA and as you have noticed, were attached to each side of the smokebox at the front of a steam locomotive. They are designed to lift smoke away from the locomotive at speed so that the driver has better visibility.
