Control stick, pedals, seat(brown?) and seat belts was in what color?
 
Control stick - Interior grey/green with black grip on spade.
Pedals - Interior grey/green though I've seen aluminium quoted somewhere.
Seat(brown?) - Composite material, red/brown.
Harness - Sutton, I'd call it a beige or light brown colour. Something around Humbrol 93 or 94 is generally considered to be in the ballpark.

I've seen an old unrestored harness on which the fabric components were almost white so they did fade over time.

Here's a pic of the seat, this one from a low-back MkXIV at Duxford. the composite material is a reddish brown, rather like those tough, fibre board storage containers, and the back rest slip-on cushion is very dark brown leather.
If you have a look at Darryl's (Tony Hill) thread on his 1:1 Spitfire IX cockpit, you can see all the colours in detail, as very little changed in the way of internal painting and colours of fittings during the life of the Spit.
