I generaly have it at 300-350, but as I fly the 38 a lot (no kidding, eh? ;)) it doesn't matter much, as the dispersion of the 50cals at 600 will still be small. It's just that the 50cals and 20mm's will come together at around 300, but after that the 20mm will drop below the cluster.
 
Hi, for myself I like to play with 190. For this one I am using 100 m for all weapons and I start fireing at 100-120 m, using all armament (extremal: dual machineguns) for less than 1 sec. (of course, at this distance you can't fire more than 1 sec). 3 of 4 enemies die at first passing :). With fighters there is a little bit problem. Hardly to get so close to them, but when I'm in position less than one second at it's out of duties for that mission :)

For my Bf-109 series, its 200 for Machine guns, and 150 for cannons. I rarely fire anything father out than that, other than to posibally make them turn. My 190's its 300 for Machine Guns, and 200 for the cannons.

When attacking bombers, I always attack head on if possible. If there isnt any fighter escort around, i Take my time in attacking head on. No need to rush it. But if fighter escorts are snooping around, then I will rush it a little, but I try not to make dead on 6 o clock attacks, just 2 dangerous.
 
Get a real joystick, preferably with force feedback to give you abit more feel, that's the best advice I can give you. Games like these dont work with playstation like controllers.
 
My favorite steed is the 109G's(G-4 actually).
All my guns converge at 200m and I use a mix of Erich Hartmann's(boom and zoom)and Gunther Rall's(under the blindspot)
tactics.

I'll usually go for No4 and catch him in a diving turn,go underneath and pull up onto No3's blindspot and carry on climbing after I've fired ready to dive back down onto another target.
If I get onto someone who's ACM are good,I'll hang back and split S with them to keep 'em insight.
They'll pretty certainly lose sight of me before I lose it of them and when they roll out to take a look around,TAKKA-TAKKA-TAKKA.

You can vary your approach based on your armament. But in general, I set convergence at between 200-300m. Also, IL2 has very detailed damage models for most planes. Don't just shoot away at the fuselage from 6 oclock. You'll just waste ammo and do little damage unless you are lucky. Try to get at a slight angle and shoot at the wing roots to hit fuel tanks and engine nacelles for multi-engined planes. You can also try to kill gunners, but normally they'll get you first. Try to master deflection shooting
