This territory formerly belonged to Spain, Mexico took it over after their revolution.
The boiling point between Mexico and the U.S. was mainly the Republic of Texas, which had defeated Mexican troops and had a treaty signed by General Santa Anna which Mexico decided to ignore. Texas, in a bid to protect itself, petitioned to become a State of the Union.
In the case of California, they fought Mexican rule and became a Republic in 1846 but the U.S. invaded in 1848 during the war and seized it.

Possibly got that story from UBC. My brother-in-law said the lab students would grow baby rats and mice in empty bottles from various brewerys around Vancouver. When they got big enough, they would fill the bottles with beer, cap it and take it back to the brewery. They would get a crap load of beer to keep quiet and they made sure not to hit the same brewery for a while
