IMHO that's not the WW2 dummy tank. Judging by the registration number it is a post-war Bundeswehr one from 50'.

Sep. 09, 1957 - Tank dummies for the German Army: One of the greandier units stationed in Western Germany has received a tank-dummy for training which shall give the soldiers an idea how their training will be later with real tanks. (This dummy was constructed in a vehicle factory in Ulm ).

Probably removed for incendiary missions to save weight and fuel.
Late in the war, a lot of B-29s had the turrets removed as unnecessary, saving weight. I think some actually came of the production line with only tail guns. The reduction in defensive armament was linked to the switch to night bombing, though the aircraft in the photo does not have black undersides.

The Silverplate B-29s had only the tail 20 mm gun.
