What gun set would you rather have for dog fighting other fighters?

It would depend what role I was intended to perform. What might be ideal armament for attacking fighters or light bombers would be useless for attacking armoured vehicles or ships and probably inadequate for attacking four engined bombers.

What I meant was a set up like the Bf-109's had or similiar.

You won't hit anything with them!

It depends what you are doing. For general air fighting a cannon/machine gun combination worked well (Spitfire, Bf 109,Fw 190). Both the British and Germans generally tended more towards cannon armament (Typhoon,Me 262) as WW2 progressed. The US stuck mainly with machine guns (P-51,P-47,P-38) until later. They probably had a lot of .50 calibre machine guns and ammunition to use :)

Since the majority of US planes only had 50's I'd probably go the same route. The pilots at the time all seemed to do well enough with them.
Weren't the only 2 US planes that were originally designed to carry a cannon the P38 and P39 anyway? And wasn't there also one varient of the Corsair that had 4 20mm cannons?
 
the bigger the gun the less ammo you have. but like stated...depends on what prey you are going for. in strictly an escort or dogfighting role....50 cals ( a mini gun would be nice ) .... if also defending against enemy bombers...an additional cannon or 2.
 
Single engine. 3 x 20mm
1 x 20mm hub cannon. 1 x 20mm cannon in each wing just outside prop arc.

Twin engine. 4 x 20mm.
All mounted in nose or fuselage sides.

Other weapon configurations are superior for specific circumstances but three or four 20mm cannon are effective against everything. Especially if they are nose mounted.
 
Approximately 1940-46- 2 20mm, 4 .50 cal. in wings
1946 and after- 4 20mm
 
The Fw 190D-13 armament of 20 mm MG 151/20 Motorkanone, 2 x 13mm MG 131 cowling mounted and 2 x 20mm MG 151/20 in the wing roots would be as good a combination as any.
 
Germany: 2-4 MG-151/20mm cannons, engine power permitting, prior that 15mm, in 1940 8 x MG17
Russians: 2 Shvaks prior 1943, later 3 Shvaks for Lavotchkins, 1 x 37mm and 1 x 20 mm for Yaks
USA: if R-2800 or Merlin is on, 6 HMGs, if V-1710 or a small radial is installed - 4 HMGs, P-38: as much HMGs as possible
UK: 8 LMGs until belt fed Hispano is available, 4 cannons for 2 stage Spitfires, Griffon fighters and Typhoon etc, 2 cannons and 4 LMGs for the rest
Italy: 4 HMGs
Japan: belt fed 20 mm ASAP, 2 for Zero Oscar, 4 for the more powerful ones
