A weird winter meant a very early start to making maple syrup this year. Three boil downs of sap so far has produced 3 very different colors of sap. The darker the syrup the stronger the flavour. All are delicious and very bad for folks like me who have diabetes.
It takes roughly 40 liters of sap to make 1 lite of syrup and the finished product is really just liquid sugar. A proper sugar maples sap is approx. 2.5% sugar. All the sap used has come from the same trees.
Darker syrup comes.from later runs of sap which usually means warmer weather as well.
My favourite way of eating syrup is over vanilla.ice cream. I also really enjoy it in my porridge instead of brown sugar.
