That's looking absolutely brilliant Dan! It's a bit difficult to see the full effects of the gloss in the pics, but I understand what you mean.
The 'normal' finish for Luftwaffe aircraft wasn't a dead-matt finish, but a semi-matt, with a slight sheen. Whether the quality of the paints and the finish was as good at this stage of the war is probably debatable, but, if you give it a light coat of semi-matt, I think it will do the job. It'll tone things down just a touch, give a good, smooth finish, and won't hide the hard work you've done in achieving the excellent results shown.
I don't know which way, or what you use, to get your matt clear coat, but I use Future, and add some Tamiya Flat Base, by trial and error, until I achieve what I require. You should be able to get a good semi-matt finish this way, and you'll be able to test it by brushing onto any scrap piece of plastic, to see how it dries. It'll only take a few minutes to do so but, a word of warning! Don't use too much of the flat base, otherwise it'll leave a white deposit when dry. However, when aiming for semi-matt, this shouldn't happen, and more Future can be added, if required, to rectify the problem.
